From Gabrielle Langholtz in Vegetarian Times magazine, regarding squash:

"Expert tip: Look for little hairs standing up all over the skin--you'll never see hairs on squash at the supermarket; this means they're very fresh."

Ah! I've noticed the squash in my garden are hairy (pubescent, in horticulture parlance) and wasn't sure what to make of it.
